Butterflied chicken with leeks and feta

So this was another of the Hello Fresh recipes, and again I was really impressed by it. Baby Blip ate a good big piece of chicken, with the leeks and feta. He also tried the tomatoes and potatoes. I must admit that a whole chicken breast was too much for me, but half seemed a bit too little. The husband did eat the whole chicken breast but even he thought that was too much.

With the ½ chicken breast I had left and the rest of the potatoes and tomatoes I made it into an even nicer dish the following day, and this is how I would make it again. I fried the leftofver potatoes, with garlic and a bit of rosemary. Then served it with some olives on the side, a lovely salad would also be good.

The recipe is below, however, I would recommend that after the potatoes has been boiled you fry them in a tbsp of Olive oil with a finely sliced garlic and one sprig of rosemary. You can still add the mint. And definitely needs either olives or a portion of salad on the side in my opinion!



Enough baby potatoes for 2 people

1 leek

1 small punnet cherry tomatoes (approx 150 g)

1 tbsp olive oil

1 tbsp balsamic vinegar

2 chicken breast

100g feta

2 tbsp mint

Salt/pepper to taste


  1. Cut the potatoes into wedges, put aside
  2.  Half all tomatoes, place in bowl with vinegar, 1/2 tbsp olive oil, pinch of salt/pepper
  3.  Finely slice the leeks, place in non stick pan with 1/2 tbsp olive oil. Cook gently for 10 min
  4.  Boil potatoes, drain when cooked.
  5.  Finely chop mint, set a side
  6. Butterfly chicken then drizzle olive oil over and season with salt/pepper. Put on baking tray and under grill for 5 min on high heat
  7. Take out, turn chicken. Add tomatoes, place around chicken and add all juice to roasting pan. Grill until no longer pink.
  8. Mix crumbled feta to leeks. Add it on top off the chicken and give it another min in oven.
  9. Combine mint with potatoes; add tomatoes and the liquid from roasting pan.

Jamie’s sizzling steak with broccoli and noodles

So this week I got another delivery from Hello Fresh. I have tried them quite a few times but I never was quite convinced. This week however I was impressed. Had 5 very good meals for the price of £15 as I had a half price offer and £10 credit, If I had bought the box without discount or then £10 off it would have cost me £50 which is a lot. I’m still not convinced; I would pay the full price for it.

I must admit that the products you get from Hello Fresh and also the recipes are excellent. It is also convenient as everything is in the right portions, if you need 1 carrot that is what they have provided you with.

Next time I make this dish I would cook the steak on a griddle pan then slice it after so it is nice and rare. Alternative it should probably be made in a wok instead of the flat pan I decided to use.

I was amazed that even Baby Blip ate the noodles and beef; he did leave the broccoli though. We are still working on getting him to eat vegetables.

Serves 2 +a hungry baby


160g purple/normal broccoli

250g lean flank steak

1 tsp coriander seeds

2 tbsp sesame oil

1 small red onion

1 clove garlic

3 cm fresh ginger

1 tbsp olive oil

1 tbsp soy sauce

1 Lind

1/2 – 1 fresh chilli

125 g medium free range noodles.


  1. Trim broccoli (if large half them) place in bowl cover with boiling water. Leave for 10 min, drain and put aside (whilst you are doing this, keep cooking)
  2. Drop noodles into boiling water. Cook until just tender, drain then toss with 1 teaspoon sesame oil. Return to pan and cover.
  3. Finely slice onion and garlic and finely chop the ginger, keep to one side. Then finely slice chilli, and cut wedges of lime. Keep aside.
  4. Now pound the coriander seeds.
  5. Finely slice the steak across the grain into finger sized strips, season with sea salt (or normal salt) and pepper. Sprinkle the coriander seeds over steak.
  6. Now fry the onion, garlic and ginger in olive oil, when onions are slightly softened add the beef (high heat). After 1-2 min add broccoli fry for another 2 min. Now add soy sauce/sesame oil.
  7. Serve on top off the noodles and sprinkle chilli over the top (if you like)
